Story
Akdağmadeni Salep is a traditional non-alcoholic beverage powder made from the tubers of wild Dactylorhiza orchids that grow naturally in the forests of Yozgat's Akdağmadeni district, dried using traditional methods and ground in a stone mill. The rich population of salep orchids in the Akdağmadeni forests makes the salep produced here among the highest quality in Turkey. Thanks to its high glucomannan content, it is used as a natural thickening agent in salep drinks, ice cream and desserts. Following an application by Akdağmadeni Municipality, it received Turkish Geographic Indication status as an appellation of origin (registration no. 889) on 16.09.2021; unlike a mahreç işareti (protected designation of origin), an appellation of origin means the product may only be produced within its own region, and searches for salep worldwide now officially point to Akdağmadeni. Harvesting wild orchid tubers is labor-intensive and seasonal work, making salep — traditionally enjoyed as a hot drink in winter — a valuable symbol of Akdağmadeni's natural richness and local craftsmanship.
