Desdi (Testi) Kebab

Story
Desti Kebabı (locally pronounced "desdi kebabı") is Yozgat's traditional clay-pot kebab, which received official Turkish Geographic Indication status (registration code 1471) in 2023, making it one of Yozgat's formally protected regional dishes. Similar clay-pot cooking traditions exist across Turkey under the name "testi kebabı" (notably Nevşehir's own version, which received its separate Geographic Indication in 2021), but Yozgat's version has its own distinct preparation: only lamb is used, and all ingredients (cubed meat, tomatoes, hot peppers, garlic) are mixed together and filled into the pot at once, rather than layered as in some other regional variants. A medium-sized "desti" (clay jug) serves about 10 people. The cleaned clay pot is filled with the mixture, topped with butter, sealed at the mouth with dough leaving a small steam vent, and cooked over an open fire — preferably oak charcoal — for about two hours. Once cooked, the pot is broken open and the kebab is served directly from it, sometimes wrapped in tandır bread or made into a wrap. Because the clay pot distributes heat slowly and evenly, the meat becomes exceptionally tender. Popular at large family and village gatherings, and a favorite at Ramadan iftar tables, desti kebabı is one of the most vivid examples of Yozgat's open-fire and clay-pot cooking heritage.
