Yumurta Tatlısı ("egg dessert") is a traditional sweet from Akdağmadeni district in Yozgat, made by frying an egg-based batter in hot oil and then soaking it in syrup. The batter is made by beating eggs with yogurt, then gradually adding flour along with baking powder until it reaches a light, pourable consistency. Small spoonfuls of batter are dropped into hot oil and fried until golden pink. Once cooled, a warm sugar syrup flavored with a few drops of lemon juice is poured over the fried pieces, which are left to absorb the syrup for about thirty minutes before being garnished with shredded coconut. Traditionally prepared in Akdağmadeni for special occasions such as holidays and weddings, yumurta tatlısı has been passed down through generations thanks to its simple ingredients and easy preparation. With its lightly crisp exterior and soft, syrup-soaked interior, it holds a distinctive place in Yozgat's dessert culture.
