İncir Uyutması ("settled fig pudding") is one of Yozgat's well-known desserts, traditionally served after meals, made from a simple combination of milk, figs, and sugar. A recipe for five people uses about 1 liter of milk, 5 figs, and 1 tea glass of sugar. The preparation is straightforward: the milk is brought to a boil, sugar is stirred in and boiled for about 2 more minutes, then finely chopped figs are added and cooked for a further 2 minutes. The pudding is then left to cool before being portioned into bowls for serving. With its short preparation time and minimal ingredient list, incir uyutması is a dessert often made at home, representing a simple yet delicious example of Yozgat's milk-based dessert tradition. The natural sweetness of the figs allows the dish to be satisfying with relatively little added sugar, making it both an economical and practical choice.
