Kavurga (Roasted Wheat & Hemp Seed Snack)

Story
Kavurga is one of Yozgat's traditional roasted snacks, passed down through generations in the rural countryside and now on the verge of being forgotten. Its best-known variety, "Çedeneli Kavurga," is made by roasting wheat grains together with "çedene" — a seed derived from hemp — in tandır ovens. Once widely produced and consumed across rural Yozgat, this snack food is now rarely encountered, yet it remains one of the region's most cherished traditional flavors. Kavurga can be eaten plain as a snack, or in some villages mixed with grape molasses (pekmez). The roasting process involves holding the grain and çedene close to the hot walls of the tandır so they toast slowly, giving the finished product its distinctive roasted, lightly smoky aroma. A part of rural Yozgat's winter gathering and hospitality traditions, kavurga is a piece of culinary heritage still remembered by older generations today and well worth rediscovering. With its simple ingredients and natural roasting method that fits well with today's interest in wholesome snacks, kavurga stands out as a valuable example worth preserving and promoting as part of Yozgat's rural culinary heritage.
