Sorgun Yağlısı is a traditional breakfast pastry unique to Sorgun district in Yozgat, made from a flour-and-oil dough and baked in a stone oven. Representing nearly a century of culinary tradition, it has become an indispensable part of the local breakfast table. Around 10,000 units are baked daily in and around Sorgun, with residents lining up at bakeries early each morning to buy them fresh; sold for just a few lira apiece, the pastry also draws visitors from outside the region. The Sorgun Municipality has secured both a patent and a geographical indication for the product from the Turkish Patent and Trademark Office, officially recognizing yağlısı as a protected regional specialty. Notable for its flaky, lightly oiled texture, Sorgun yağlısı is eaten plain or alongside breakfast staples such as cheese, honey, or kaymak (clotted cream), and continues to hold a strong place in Yozgat's breakfast culture. Since receiving its geographical indication, yağlısı has begun to be promoted beyond the region as well, becoming a significant contributor to Sorgun's local economy and drawing visitors who line up at bakeries early in the morning.
