Kabak Çiçeği Dolması is a regional stuffed dish made by filling freshly picked zucchini (squash) blossoms from Yozgat's summer gardens with a mixture based on bulgur, rice, or minced meat. Grown especially in Merkez district and the surrounding villages, the delicate squash blossoms are harvested while still fresh, carefully cleaned inside, and filled with a mixture typically combining onion, bulgur or rice, and fresh herbs such as mint and parsley. The stuffed blossoms are then gently cooked in olive oil or butter over low heat, allowing them to steam in their own moisture so that the flower's delicate texture stays intact while absorbing the flavor of the filling. Made from a short-lived, delicate summer ingredient, this dolma is a fine example of Yozgat's seasonal, garden-based cuisine, prepared using recipes passed down through generations within families and considered one of the most special dishes of the summer table. Because the labor-intensive preparation and the short life of the blossoms mean the dolma must be eaten fresh, it is a dish frequently found at village markets and home tables across Yozgat during the summer, reflecting a careful, seasonally attuned approach to eating.
