Çiğdem Pilavı is a traditional bulgur pilaf prepared in the Yozgat region to celebrate the arrival of spring, particularly during the Hıdırellez and Nevruz festivities. It takes its name from "çiğdem" (a wild spring crocus), whose roots and flowers are gathered through a local tradition called "çiğdem gezmesi," in which children visit neighboring homes during harvest season to collect the plant. In the recipe, bulgur is toasted in butter and cooked in chicken broth; once cooked, the çiğdem roots and blossoms are stirred in, and the dish is left to rest before serving, giving it a light herbal aroma and a fresh flavor associated with the arrival of spring. Passed down through generations in rural communities, this tradition is not merely a recipe but part of a spring celebration deeply connected to nature. Still prepared in season in Yozgat's rural areas today, çiğdem pilavı is regarded as an important symbol of the city's gastronomic identity and its agricultural-cultural heritage.
