Yozgat Arabaşı is one of the province's most distinctive and best-known local dishes, its name deriving from "ara aşı" — a filling dish traditionally eaten between main meals, especially on cold winter evenings when families gather together before bedtime. Warming the body on chilly nights and functioning as both a soup and a hearty main course, the recipe is built in two stages: first, a plain dough kneaded from flour and cold water that turns into popcorn-like granules when poured into boiling water; second, a thick sauce made by boiling and shredding chicken or turkey, then combining it with roasted flour, tomato paste, red pepper flakes, and lemon juice. The two components are brought together on the plate and finished with a generous drizzle of red-pepper butter. An essential treat at winter evening gatherings, weddings, and family visits throughout Yozgat, arabaşı is still prepared using traditional methods in the city's restaurants and home kitchens alike.
